Kimchi stew (Kimchi-jjigae) is a very easy dish to make, and even beginners can do it the first time. Some of my Korean friends, who don’t cook much, make it too! The only problem is that it might be too spicy for some people, especially if they don’t like kimchi or spicy food.
To make it more complicated, you could try making your own kimchi from scratch and wait for it to be the perfect age. You could also make the rice cakes (ddeok) yourself, but only very experienced Koreans usually do that—most people don’t bother.
Kimchi stew is a favorite comfort food for many Koreans.
