When the weather turns crisp or you’ve had one of those long, exhausting days, nothing resets the soul faster than a bubbling, terracotta-colored pot of Kimchi Jjigae. It is the undisputed backbone of Korean home cooking: smoky, savory, tangy, and deeply warming.

The beauty of this stew is its simplicity—it only asks for a handful of pantry staples. But there is one non-negotiable rule: the kimchi must be old. Freshly made kimchi won’t give you that deep, complex tang. You want the jar pushed to the very back of the fridge that looks slightly translucent and smells aggressively sour (shin-kimchi).

Here is how to make a restaurant-quality pot at home in under 30 minutes.

Ingredients (Serves 2–3)

  • 2 cups sour, well-fermented cabbage kimchi, chopped into bite-sized pieces

  • ¼ cup kimchi juice / brine (straight from the jar)

  • 200g (7 oz) pork belly or shoulder, cut into bite-sized chunks

  • ½ block firm or medium tofu, sliced into ½-inch slabs

  • 2 scallions (green onions), diagonally sliced

  • 2½ cups anchovy-kelp stock (or chicken stock / dashi / plain water)

  • 1 tbsp toasted sesame oil

The Flavor Base:

  • 1 tbsp Korean chili flakes (gochugaru)

  • 1 tbsp minced garlic

  • 1 tbsp Korean soup soy sauce (guk-ganjang) or fish sauce

  • ½ tsp sugar (essential to balance the acidity of sour kimchi)

Step-by-Step

1. Sauté the base

Heat the sesame oil in a shallow pot or Korean earthenware bowl (ttukbaegi) over medium heat. Add the pork and sauté until the edges begin to brown and render their fat (about 2–3 minutes).

2. Caramelize the kimchi

Toss in the chopped kimchi. Stir-fry it alongside the pork for 4–5 minutes until the cabbage softens and turns slightly translucent. This step mellows the sharp raw acidity and unlocks deep umami.

3. Simmer and deepen

Pour in your stock and the kimchi juice. Stir in the minced garlic, gochugaru, soup soy sauce, and a pinch of sugar. Bring everything to a rolling boil, then drop the heat to medium-low, cover, and let it simmer gently for 15–20 minutes. The longer it simmers, the more tender the pork becomes and the richer the broth tastes.

4. Finish with tofu & scallions

Uncover and arrange the tofu slices and chopped scallions neatly on top. Let it simmer for another 3–4 minutes until the tofu is piping hot and has absorbed the fiery broth.
